Cucumber sandwiches are a light, tasty and healthy lunchbox alternative.
Serves 4 rounds. Prep Time: 45 minutes.
- 2 baby snacking cucumbers (or as required)
- 8 slices of white bread
- Salt and pepper to taste
- Peel and slice the baby snacking cucumbers into extremely thin, almost translucent, strips.
- Immerse in vinegar for 30 minutes, then dry, season and spread evenly between two slices of fresh, white, buttered bread.
- Slice each round of sandwiches diagonally into quarters. Remove the crust if desired (optional).
Hint: For something a little different, try adding mint, cream cheese and even Vegemite to the sandwich. Alternatively, butter flavoured with tarragon, garlic or paprika can also be used.
